I was away from my computer all day yesterday so it’s Meal Plan Monday on Tuesday this week.  Mark & I are loving all of these new healthy recipes!  Who knew that healthy food could actually taste good?!  Here’s a look at what we’re going to eat this week:

Monday:     Grilled Apple Chicken, Go for the Grains Casserole

Tuesday:     Leftovers

Wednesday:     Apricot-Glazed Salmon with Herb Rice

Thursday:     Light & Delicious Guacamole, Chicken Club Brunch Ring

Friday:     Lemon Mushroom Chicken, Vegetable Rice Skillet

Saturday:     Ziti with Tomato-Pesto Sauce

Okay, so we tried all of the new recipes from last week and they were really good!!  I’m so proud of myself for cooking healthy!  Mark’s favorite dish was the Enchilada Casser-ole! and we both LOVED the Pasta Salad.  Click HERE for last week’s menu.

Instead of keeping track of each store, this past week I kept a running total of all of the deals that I got and tallied up the results!  Here’s a picture for fun! 

5 rolls of paper towels

24 rolls of toilet paper

15 bottles of body wash (various kinds)

4 cans of shaving cream

1 pack of bar soap

4 bottles of juice

5 razors

2 packs of pads

8 packs of gum

2 tubes of lip gloss

4 tubes of toothpaste

4 containers of deodorant

2 bottles of body mist

4 bottles of hand soap

2 containers of baby wipes

And I think that’s all!  =)

Total Savings:  $206.93

Final Price:  $33.28

Here’s what Mark & I will be eating this week.  These are all new recipes so I hope we like them!  These recipes are definitely out of my “southern food” comfort zone but I am determined to try (and like) new foods!  I have linked each meal to the recipe if you would like to try it yourself.

Kale Chips…Yum? June 5, 2010

Hey guys!  It’s been a while, huh?  Now that summer has arrived, I will hopefully have more time to coupon…and to blog!  Mark & I have been trying to eat really healthy this year (lots of fresh ingredients!) so my couponing has been on the back burner.  Time to dust off those inserts and get to it!  I plan to still find deals on household items and cooking staples like olive oil, broth, etc.

We are still getting our Farmers’ Market Baskets each week and loving it!!  Here’s a recipe that I HAD to share!  I didn’t even know what kale was a few months ago but now my hubby and I love the stuff…if it is cooked this way!  Thanks for the recipe, Kristina!

Kale Chips 

1 bunch kale
1 tablespoon olive oil
1 teaspoon seasoned salt

Preheat an oven to 350 degrees. Line a non insulated cookie sheet with parchment paper or aluminum foil.  With a knife or kitchen shears, carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner (or let it air dry). Drizzle kale with olive oil and sprinkle with seasoning salt.  Bake until the edges brown but are not burnt, 10 to 15 minutes.  Enjoy!
Cooking the kale this way totally changes the texture and makes it crunchy…great for kids!
